PANGLAO ISLAND, BOHOL, March 20, 2020 – Premier luxury accommodation, Amorita Resort has recently unveiled its latest addition to its line of gastronomic venture with the opening of Turchino, a modern Italian restaurant highlighting the culinary artistry behind pasta, pizza, and other Italian dishes all of which are made from only the freshest ingredients. Its menu features unique and innovative takes on Italian cuisine, combining it with familiar flavors, which sheds a new light to Italian classics.
Among the pizza options are the Margherita Moderna, a modern rendition of the Neapolitan classic margherita, by using oven-roasted tomatoes, pecorino and soft white cheeses, and fried basil, and the Alla Tropicana, reminiscent of the popular Hawaiian pizza, only that it uses dried pineapples instead and further elevates the dish with spicy pepperoni and house-cured duck breast. Other must-tries include the Porchetta Alba, a breakfast-inspired pizza with creamy white sauce topped with porchetta chunks, soft-cooked egg, spinach, and fried potatoes then drizzled with truffle oil, and Festa Italiana, pizza with white sauce topped with pesto, scamorza cheese, walnuts, caramelized onions, and honey. Turchino’s pizza doughs are created in-house daily to ensure its freshness, while pizzas are assembled upon order and baked in the restaurant’s own brick oven giving it a distinct smoky flavor and irresistible crisp and chewy crust.
The pastas that the restaurant serves also deserve a merit. Guests should not miss the upgrade to the classic Spaghetti Pomodoro with Meatballs. Using beef brisket in this dish provided a more tender and flavorful take on the meatball. For a familiar yet a unique rendition of the crowd-favorite carbonara, Turchino upgraded this dish with the Black Pepper Carbonara by crafting peppered fettuccine from scratch and incorporating cream, pickled shallot reduction, cured egg yolk, and guanciale in the mix. Guests who prefer to have a taste of the Bohol’s seafood would be delighted to have Gambari e Calamari, a pappardelle dish featuring the region’s freshest prawns and squid in amatriciana sauce. Instead of using the instant pastas that are readily available in stores, Turchino creates each and every pasta noodles in-house that will give the diners an exclusive and unique treat every time they dine at the restaurant.
Chef Mark Isla, the head chef of Turchino, mentions that the dishes that they serve at Turchino are crafted with the full enjoyment of the diners in mind. Hailing from Parañaque City, Chef Mark shares that coming up with dishes to serve at Turchino is a challenge: from sourcing the best local ingredients to coming up with the recipes for the pizza dough and pasta noodles based on the island’s water salinity. “There are a lot to consider when coming up with the recipe. The ingredients that we have in Manila does not directly translate to what we have here in Panglao. For instance, it took us a lot of tries to come up with the ideal ingredient ratio for dough and pasta noodles that will work perfectly with the island’s water.” This just proves Chef Mark’s expertise and craftsmanship in creating the menu and this is definitely showcased in every bite and flavors that guests will encounter in the restaurant.
Other must-tries at Turchino include the crowd-favorite Mozzarella d’Oro, a deep-fried battered mozzarella cheese with cherry tomato marmelata and fried basil leaves as garnish, which combines the goodness of both Caprese salad and fried mozzarella sticks; Cioppino, an Italian-style mussels stew served with grilled bread and black olive caponata; and the Crispy Panzanella, a seasoned toasted bread salad with tomatoes, cucumber, grapes, kalamata olives, and sundried tomatoes tossed in balsamic vinaigrette.
